Eating healthy definitely plays a key role in healthy aging and longevity. But what about the joy of eating yummy delicious foods?
We recently had the pleasure of speaking with Dr. Valencia Ray, MD, a functional medicine physician specializing in functional, mind-body-spirit, and anti-aging medicine, about her holistic approach to healthy aging in women. In our talk, Dr. Ray emphasized the importance of enjoying our food as a part of a healthy mind-body-spirit balance.
As an example, Dr. Ray shared with us one of her favorite recipes, the keto cauliflower potato salad. It looks and tastes like potato salad, but it’s made with cauliflower instead, along with other healthy ingredients.
As Dr. Ray demonstrated, the key takeaway is that healthy eating is not about perfection. And it’s not about depriving ourselves, either. Just like many other areas in our life, balance is key.
Keto Cauliflower "Potato" Salad
Ingredients
Salad
- 1 head cauliflower, steamed (size determines quantity of the Yield)
- 5 oz turkey or grass-fed beef or pork bacon, cooked (optional)
- 2 hard-boiled large pasture-raised brown eggs (preferred, optional)
- 3-4 celery stalks, chopped (adjust to cauliflower size)
- 1/2 red onion, finely chopped
- 1-2 tbs fresh chives
- Celery Salt to taste (optional)
- Salt and Pepper to taste
Dressing
- 1 1/2 cup PRIMAL Brand, Lime Green label avocado oil mayonnaise (adjust to cauliflower size)
- 3/4 tbsp. organic Dijon mustard
- 3/4 tbsp. Braggs Apple Cider Vinegar
- Salt and pepper to taste
Instructions
- Gather all the ingredients.
- Start by making the salad dressing. Mix the keto mayonnaise, Dijon mustard, and Apple Cider Vinegar until well combined. Add in salt and pepper to taste.
- In a large bowl, add in the steamed cauliflower, chopped celery stalks, cooked bacon, red onion, boiled eggs, and fresh chives.
- Pour salad dressing over salad and mix lightly until combined. Add more salt and pepper to taste.

Dr. Ray’s quick tips for delicious healthy eating
- One thing that makes healthy eating work is getting new recipes. This may not happen overnight, but we can all appreciate having fun in our kitchen creating yummy and healthy meals for ourselves and our loved ones.
- I find that cauliflower is extremely versatile. Feel free to experiment and mix with it garlic, parsley, and parsnips. These are low in carbs and don’t have GMOs, lectins, or other compounds that can cause potential issues for some people.
- As a keto-friendly, gluten-free holiday dressing, gravy, or deserts, experiment with almond flour, cassava, or coconut flour.
- Use monk fruit or stevia to sweeten.
- Play with your food in soups too. Get a Vitamix, mix sweet potato, carrots, or other veggies, and grind them up. Add seasoning and cook it just like you would cook soup. Instead of using regular dairy-based cream, use coconut milk.
